Join us for a day of nature connection and nourishment at Lime Wood on 22nd May 2025, where we’ll explore the wild, edible treasures of spring. Led by resident forager Sammie Longhorn, you’ll uncover the best foraged finds in the grounds of Lime Wood and the New Forest. Then, dive into the world of fermentation with Rachel Booth, founder of Newlyn Fermentary, alongside Lime Wood Development Chef Iain Longhorn, and learn how to transform your foraged goods into vibrant krauts and kimchis.

Rachel shares her passion for fermented foods, revealing their incredible health benefits and how easy they are to create at home. Lacto-fermentation, one of the oldest techniques, is more popular than ever for its gut-loving properties. This hands-on workshop will not only introduce you to the wonders of fermentation but show you how simple it is to incorporate foraged ingredients into your everyday diet.

After a day of learning, come together for a delicious feast, celebrating the wild and fermented flavours you've discovered.

9:30am - Arrival

10am - 11am - Foraging with Sammie

11am - Tea Break (wild teas/water kefir)

11:30am - 1:30pm - Fermentation Workshop with Rachel, alongside Lime Wood Development Chef Iain Longhorn

1:45pm - 3pm - Lunch in Raw & Cured, featuring some of the foraged ingredients and ferments

£145 per person to include an hour’s foraging, two-hour fermenting class, lunch including soft drinks and your own ferments to take away.
